Guadalajara is a chain of five local Mexican restaurants owned by Gilbert Lopez and Juan Ornelas. It has locations on East Market Street, Fontaine Avenue, Greenbriar Drive off of Route 29, Pantops, and Hollymead. It is a perennial winner of the C-VILLE Weekly's Best of C-VILLE award for best Mexican restaurant in Charlottesville.

History

Lopez opened the first Guadalajara, which he named after his parents' birthplace in Mexico, at the current East Market Street location in 1988 using $30,000 of capital borrowed from friends and family[1]. Guadalajara's fourth location opened on Pantops in 2008, and its fifth location followed soon after in 2010 on the site of the former Royal Indian Restaurant on Seminole Trail near Hollymead[2].


Philosophy

Owner and founder Lopez has declared "consistency is important" and eats at Guadalajara locations 2-3 times a week to ensure uniform quality between his different locations[1].
